Smoked Ham for the Holidays

A Selection from Steve's Family Favorites Recipe
Ham & Eggs w/ Red-eye Gravy
1 Smoked Ham
Honey, Pure Maple Syrup, or Brown Sugar
Pastured Eggs prepared any style
Butter
1 Cup Black Coffee
1/4 Cup Heavy Cream
Preheat oven to 350 degrees. Cook ham in ovenproof skillet until internal temperature of 160 degrees . Cover with sweetener, Pure Maple Syrup is our favorite, and return to oven to glaze (leave in oven until pan juices start to turn brown). Return skillet to stove top over medium-high heat, remove ham to cutting board and cover with aluminum foil.
Pour coffee into skillet to deglaze, scraping all bits/nibs from the pan. Heat coffee to slow boil and add heavy cream. Stir until thickened. If needed, add more coffee. Add salt & pepper to taste. Slice ham onto plate next to eggs and top with butter. Pour gravy over ham and eggs.
