Smoked Ham for the Holidays

Do you want a clean and healthy ham option for your holiday dinner?  Would you like to wow your guests with flavor and texture that they cannot find in a grocery store?  Clean, healthy, flavor, texture, and much more comes from pigs that live their lives outdoors, exercising daily, and eating a foraged diet of nuts, roots, and bugs along with highest quality Non-GMO feed from local feed mill, As Created Feed.  Then, these pigs are processed at a USDA processor in New Wilmington, PA.  This processor, Whiting's Meats, has won awards for PA Best Bacon and their ham is just as good!  All of these things combine to bring you ham that is UNMATCHED in this area!

Lamppost Farm options for Pastured Holiday Ham are three sizes: Quarter (4-8 lbs), Half (10-12 lbs), and Whole (22+ lbs).

​A Selection from Steve's Family Favorites Recipe
Ham & Eggs w/ Red-eye Gravy
1 Smoked Ham
Honey, Pure Maple Syrup, or Brown Sugar
Pastured Eggs prepared any style
Butter
1 Cup  Black Coffee
1/4 Cup Heavy Cream

Preheat oven to 350 degrees.  Cook ham in ovenproof skillet until internal temperature of 160 degrees .  Cover with sweetener, Pure Maple Syrup is our favorite, and return to oven to glaze (leave in oven until pan juices start to turn brown).  Return skillet to stove top over medium-high heat, remove ham to cutting board and cover with aluminum foil.  
Pour coffee into skillet to deglaze, scraping all bits/nibs from the pan.  Heat coffee to slow boil and add heavy cream.  Stir until thickened.  If needed, add more coffee.  Add salt & pepper to taste.  Slice ham onto
 plate next to eggs and top with butter.  Pour gravy over ham and eggs.

Lamppost Farm is proud to raise pastured NEW Idaho Pasture pigs.  These pigs spend their days eating non-GMO feed, running around our pasture, rooting through the city's leaf waste for acorns, and snuggling to keep warm in the winter.

A very exciting element of a heritage breed hog is the rich flavor of the meat it produces.   Of course, as with other animals raised on grass pasture, the meat they produce have health-positive qualities of omega 3 fats and conjugated linoleic acids...imagine heart-healthy bacon!
